Vintage Notes: The 2012 growing season was a warmer one, very reminiscent of 2007. Long hot summer days were matched by cool nights, which allowed the vines and grape bunches to grow at a steadily rapid rate. In autumn, the nights were much cooler, but the days were still warm with very little threat of rain. With these perfect fall days the grape flavors developed steadily, with the cool nights slowing down sugar accumulation. Each parcel sourced was picked at their individually perfect point of physiological ripeness. Sourced from our own estate and neighboring vineyards, this Spring Mountain Cabernet Sauvignon captures the essence of mountain fruit.
Winemaker Notes: The grapes were sourced from our Estate, and neighboring Wurtle and York Creek Vineyards, with the entire blend being solely from the Spring Mountain Appellation. Each Vineyard block was fermented and aged separately for 16 months then blended & followed by another 6 months in barrel, the barrels being French oak and 70% new. Merlot made the blend for the first time in a decade during the blind tastings that we do to assemble our wines, allowing for a lusher fuller palate. The addition of Cabernet Franc and Petit Verdot spiced up the blend and provided more backbone to the wine.
Tasting Notes: The 2012 Spring Mountain Cabernet jumps from the glass. Immense amounts of aromatics are extremely prevalent upon pouring. Giant amounts of blackberry, ripe fig, violet perfume and plum are surrounded by creamed coffee, cedar and allspice. The mouth feel is velvety, and rich. Black currants, mocha and pepper flavors take over on the palate. The tannins are definitely present in a round chalkier form, where very firm mountain acidity aids to balance them out.
