2005 Rattlesnake Hill Cabernet Sauvignon ~ Spring Mountain District


Rattlesnake Hill is a small rocky knoll on the estate, located at 2050 ft elevation on Spring Mountain. The fruit from this knoll is incredibly intense due to the stress put upon the vines by the rock nature of the soil on the hilltop. Each year the Rattlesnake Hill Cabernet is a blend of all of the fruit from this hilltop as well as the best barrels we produce from other parts of the Estate Vineyards. Rattlesnake Hill is not produced in every vintage. If we feel the wine, for any reason, is not up to our standards for this special bottling we do not produce it.

Typically the Rattlesnake Hill wines are very powerful, structured and multi-layered wines with silky tannins. The fruit for this wine is harvested, cold soaked for 4 to 6 days and fermented in small bins and tanks punched down or pumped over 2 to 3 times a day. The maceration times are typically 13 to 15 days. Once fermentation is complete the wine is pressed off into 90% new French oak barrels, aging for 21 months before bottling.
